Crock-Pot Roast Pork
I whipped up this roast yesterday for the new year. I didn't have fresh garlic in the house but it still turned out amazing!

handful frozen strawberries | handful frozen raspberries |
handful frozen blueberries | handful frozen pineapple |
10 oz unsweetened coconut milk | 2 heaping TB almond butter |
1 1/2 TB organic raw wild honey | 12 oz almond milk |
1 tsp organic vanilla extract | 2 raw eggs (optional) |
Place all ingredients in a blender or food processor (We used our Ninja). Mix until the smoothie reaches the desired consistency. We used our almond butter as the protein. However, you can add 2 raw eggs for protein or protein powder if you wish.

Jamaican Beef Pepper Pot
Here is a new Paleo recipe I plan to try. Thank you to http://www.paleofood.com for posting this.
Place sweet potatoes in slow cooker. In a large saucepan or Dutch oven,
heat oil over high heat; brown beef in batches. Add to slow cooker. Add
bacon to saucepan and fry over medium heat until crisp. Drain off fat. Add
onions and garlic; cook, stirring occasionally until softened, about 5
minutes. Add stock, 1 1/2-cups water, tomato paste, thyme, salt and pepper;
bring to boil. Pour into slow cooker. Cover and cook on low for 8-10 hours
or until beef and sweet potatoes are tender. Add the red and green peppers.
Cover and cook on high for 15 minutes. Stir in citrus juice and hot pepper
sauce.

Sesame Balsamic Shrimp Salad
This recipe was created by my husband on a whim and it is DELICIOUS!!!!!!!!!!!
For the dressing:
For the salad:
Put salad in bowl, top with shrimp and drizzle with the dressing.
For the dressing:
sesame oil | wheat-free tamari soy sauce |
balsamic vinegar | spicy seasoning mix (like Mrs. Dash) |
For the salad:
steamed shrimp | salad mix of your preference |

Slow Cooker Pork Loin
Add all of the ingredients to a large Crock-Pot. Cook on low for 6-7 hours, then enjoy.
Stir-Fry Beef Salad
Add olive oil to a skillet. Heat over medium. Add sliced onions, saute until soft. Add the beed and the tamari, tossing often. Add the bell peppers when the beef has browned. Add the mixed greens to your plate, then top with the stir fry meat. Add balsamic vinegar and more olive oil to taste.
Sausage Stir-Fry Breakfast
Add olive oil to a skillet. Heat over medium. Add diced onions, saute until soft. Add the sausage, cook until browned, tossing occasionally. Add the greens, reduce the heat to medium-low and cover. Serve when the greens are wilted and soft.
Other options: top with 1-2 eggs over easy, or serve with salsa.
Easy Ceviche
Rinse the shrimp, divide between two bowls. Pour half of the marinara sauce over each bowl of shrimp, then drizzle each with 1 TB of both olive oil and lemon juice. Sprinkle with the basil. Enjoy!
****Chicken Apple Hash****
Heat the olive oil in a saucepan over medium heat. Shred and add the chicken. Grate the apple, then add to the pot with your spice of choice. Cover and cook on medium-low, stirring frequently. Once the apple has cooked down and become soft, it is ready to serve.

1st Paleo Recipe We Tried
One of the first recipes we tried when committing to the Paleo Diet was Tuna and Cabbage Salad. It was ok but did not include enough tuna for our taste. I highly recommend the addition of another 1/2 can at least. This makes a great lunch dish.
I apologize for not having a picture but I am catching up on the recipes already eaten. As we prepare new dishes/meals I will post pictures here.

New Year - New Goals
So the hubby and I are now involved with a women's tackle football team (he's a coach; I'm on staff). Many of the ladies on the team live a Paleo lifestyle. We have decided to give it a try. We started on January 2, 2012.
I am reading two books on Paleo which include recipes. I will be sharing the recipes of what we eat here. Many are courtesy of The Paleo Solution: The Complete Human Diet by Robb Wolf. Otheres are from The Paleo Diet Cookbook by Loren Cordain, Ph.D. I will specify the source of each recipe. Some are actually created by us.
As many of you know, we typically have 21 days of a Daniel fast in January as part of Awakening. This year, rather than fasting types of food, we are fasting certain material things. A small part of me believes that things are a much better sacrifice.
We are trying Paleo for 30 days. After that time we will decide whether to modify. So far I have more energy, feel better, and remain more focused. I am excited to see benefits that others have spoken of, such as being acne free and experiencing weight loss no matter the effort. I think that we will incorporate our Body for Life workout regime as well. We are looking forward to being healthy and fit in 2012!
