More Paleo recipes we have tried

All of the recipes posted here are courtesy of The Paleo Solution: The Complete Human Diet by Robb Wolf. I have decided to post all recipes tried thus far in one post so as not to create recipe posts without pictures.

Slow Cooker Pork Loin



3 lbs pork loin1 can tomato sauce (12 oz)
2+ cups sliced zucchini4 cups chopped cauliflower florets
1-2 TB basil


Add all of the ingredients to a large Crock-Pot. Cook on low for 6-7 hours, then enjoy.



Stir-Fry Beef Salad


2 tsp olive oil3/4 cup sliced onion
1 lb beef tip steak, sliced into thin strips1 TB wheat-free tamari soy sauce
1-2 cups sliced bell peppers1 bag of mixed greens
balsamic vinegar


Add olive oil to a skillet. Heat over medium. Add sliced onions, saute until soft. Add the beed and the tamari, tossing often. Add the bell peppers when the beef has browned. Add the mixed greens to your plate, then top with the stir fry meat. Add balsamic vinegar and more olive oil to taste.



Sausage Stir-Fry Breakfast

1-2 tsp olive oil1/2 cup diced onions
1/2 lb sausages, sliced (no nitrates) 4 cups of spinach or other greens


Add olive oil to a skillet. Heat over medium. Add diced onions, saute until soft. Add the sausage, cook until browned, tossing occasionally. Add the greens, reduce the heat to medium-low and cover. Serve when the greens are wilted and soft.
Other options: top with 1-2 eggs over easy, or serve with salsa.


Easy Ceviche
10 oz tail-off, precooked shrimp2 cups low-sugar marinara sauce
2 TB oilive oil2 TB lemon juice
1 tsp basil


Rinse the shrimp, divide between two bowls. Pour half of the marinara sauce over each bowl of shrimp, then drizzle each with 1 TB of both olive oil and lemon juice. Sprinkle with the basil. Enjoy!


****Chicken Apple Hash****
2 tsp olive oil6 oz leftover chicken
1 apple2 tsp either cinnamon or allspice (choose your favorite)


Heat the olive oil in a saucepan over medium heat. Shred and add the chicken. Grate the apple, then add to the pot with your spice of choice. Cover and cook on medium-low, stirring frequently. Once the apple has cooked down and become soft, it is ready to serve.

1st Paleo Recipe We Tried

One of the first recipes we tried when committing to the Paleo Diet was Tuna and Cabbage Salad. It was ok but did not include enough tuna for our taste. I highly recommend the addition of another 1/2 can at least. This makes a great lunch dish.

I apologize for not having a picture but I am catching up on the recipes already eaten. As we prepare new dishes/meals I will post pictures here.

Tuna and Cabbage Salad
  • 3-4 cups shredded cabbage
  • 1 can tuna, drained (6.5 oz)
  • 1 TB toasted sesame oil


Shred the cabbage into a bowl. Top with the tuna, drizzle with the oil.

New Year - New Goals

So the hubby and I are now involved with a women's tackle football team (he's a coach; I'm on staff). Many of the ladies on the team live a Paleo lifestyle. We have decided to give it a try. We started on January 2, 2012.

I am reading two books on Paleo which include recipes. I will be sharing the recipes of what we eat here. Many are courtesy of The Paleo Solution: The Complete Human Diet by Robb Wolf. Otheres are from The Paleo Diet Cookbook by Loren Cordain, Ph.D. I will specify the source of each recipe. Some are actually created by us.

As many of you know, we typically have 21 days of a Daniel fast in January as part of Awakening. This year, rather than fasting types of food, we are fasting certain material things. A small part of me believes that things are a much better sacrifice.

We are trying Paleo for 30 days. After that time we will decide whether to modify. So far I have more energy, feel better, and remain more focused. I am excited to see benefits that others have spoken of, such as being acne free and experiencing weight loss no matter the effort. I think that we will incorporate our Body for Life workout regime as well. We are looking forward to being healthy and fit in 2012!

Tuesday, January 11, 2011 - Vegetable Stir Fry

2 TB olive oil
1/4 cup soy sauce
1 small onion
1 red bell pepper
1 bunch broccoli florets
1 1/2 cups frozen whole kernel corn, defrosted
1 TB ground ginger

Saute the onion, bell pepper and broccoli in the olive oil and soy sauce until tender. Add the corn and continue to cook for about 3-5 minutes more. Sprinkle the mixture with ground ginger and stir.

Serve over brown rice.
*Other variations of this recipe add 2 zucchini, sliced and 1 small can of sliced water chestnuts.

Tonight dinner is on my own. The hubby and my oldest son went to a sports bar/restaurant to watch the BCS Championships and my youngest son requested a snack of pop tarts when he got home from school. He then requested a peanut butter and jelly sandwich with a glass of milk later in the evening.

Dinner for me was simple but very tasty (and healthy). I grabbed a bag of frozen vegetable stew mix and put it in a pot with vegetable broth. I let it simmer for 35 minutes and ate it just like that. I have to tell you it was better than I thought. I even have some leftovers to go with a salad for lunch tomorrow. Yummy!!!!!

Sorry to be so boring the last few days but the boys' illnesses have really worn me out. Not to mention the fact that I think I may have caught some bug myself. :-(

Today's dinner was a Teriyaki Pork Tenderloin and pasta. We bought a pre-seasoned pork tenderloin and rinsed it first (our last experience with one resulted in A LOT of teriyaki). We then placed it in a 400 degree oven for 45 minutes (if I remember correctly--it is literally based on the weight of the tenderloin).

I adjusted the Herbed Butter Penne recipe from three days ago to accommodate rotini pasta and spinach (rather than penne and broccoli). It was still just as good. :-)

January 8, 2011 - Fish, Sweet Potato Fries, mini-cheesecakes

Tonight the hubby cooked. I was updating my blog and catching up on the news of the Arizona shooting (please pray for the victims, their families, the suspect, the city, state and nation) when I noticed my husband moving pots and pans around in the kitchen. He told me he was cooking dinner so I continued to surf the web.

He made a delicious baked fish entree with a side of sweet potato fries and topped everything off with miniature cheesecakes. I told him to remember what he did so I could type up the recipes. I will post them as I get them but do know that everything was great!

UPDATE: The mini-cheesecakes were amazing!!!!!!!!!
